- Wash and cut potatoes into French fry shapes (about ¼–½ inch thick).
- Place the cut fries in an ice bath for 10 minutes to remove excess starch.
- Bring a large pot of water to a boil. Add the fries and blanch for 3–5 minutes.
- Immediately transfer to another ice bath for 10 minutes.
- Drain well and pat completely dry with a towel.
- Spread in a single layer on a baking sheet and flash freeze for 2 hours.
- Transfer to freezer bags, remove as much air as possible, label, and store in the freezer.
To Bake from Frozen:
- Preheat oven to 450°F.
- Spread frozen fries on a baking sheet in a single layer.
- Spray generously with oil and season with salt and your favorite spices.
- Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
